Squid Confit

<p>An alternative method of making confit that achieves the same great results!</p>

Ingredients

1 tube of calamari

1 French shallot

½ bulb of garlic

Wedge of a lemon

2 bay leaves

1sp coriander seeds

Salt

1 + ¾ Extra virgin olive oil (or enough oil to fully submerge)

Preheat oven to 140deg

Method

Place all aromats in a shallow baking dish. Add squid pieces. Submerge with olive oil. Cook for 25 – 30 minutes.
