Pork Saltimbocca

Ingredients

4 thin pork steaks
4 sliced of prosciutto
4 large sage leaves
Flour, for dusting
Olive oil
10g butter

½ lemon
1 clove garlic, finely chopped
½ bunch silverbeet, finely chopped
salt and pepper

Method

Using a meat mallet gently beat out pork steaks to make them thinner. Place one piece of prosciutto and a sage leaf on one side of the pork. Affix with a toothpick. Lightly dust the pork.

Heat oil and butter in a large frying pan. Add pork steaks and cook, prosciutto side down first for 1 minute.  Then turn and cook for 2-3 minutes on the other side.  Remove and keep warm.

Squeeze lemon into the pan and add garlic, silverbeet and season with salt and pepper. Sauté the for 30 seconds. Serve with the Saltimbocca.
