Jazzing up Olives with Extra Virgin Olive Oil

Ingredients

¼ cup extra virgin olive oil

¾ cup Sicilian olives in brine

¾ cup Kalamata olives in brine

1 sprig rosemary

1 bay leaf

½ red chilli

1 strip lemon peel

Crusty Turkish bread, to serve

Jazzing up Olives with Extra Virgin Olive Oil

Method

Drain the olives and pat them dry.

Place all of the ingredients into a small pan over low heat and warm through for 5 minutes being careful not to bring to the boil.

Serve warm or at room temperature with crusty bread on the side.
