Fettuccine with Chicken, Taragon & Walnuts

1pkt San Remo Fresh Fettuccini 375g
2tbsp butter
1 shallot, finely diced
1tbsp tarragon, finely chopped
1 skinless chicken breast, diced small
½ cup white wine
1 cup double cream
½ cup grated parmesan
½ cup walnuts, chopped
Salt & pepper

Fettuccine with Chicken, Taragon & Walnuts



In a pan on low heat, melt the butter. Next add the shallot and cook for 3 to 4mins.

Place chicken into the pan and cook for 3mins stirring occasionally.

Pour the wine into the pan and reduce by half.

Add the cream, tarragon, walnuts and season with salt & pepper to taste. Cook on low for 10mins, stirring occasionally.

Cook pasta as per packet directions.

Strain pasta once al dente and pour into pan.

Serve with generous amount of parmesan over the top.
