Dukkah Barramundi Wraps

Ingredients

100g Greek yoghurt, plus extra yoghurt to garnish

½ onion, finely chopped

1 garlic clove, finely minced

1 heaped tsp curry powder

600g of barramundi fillets, skinless and boneless, cut into 3cm cubes

2 tsp dukkah of your choice

Lebanese bread, to serve

1 small Lebanese cucumber, cut into rounds

1 handful of mesclun lettuce leaves

Pickles of your choice

Salt & pepper

Method

Combine the yoghurt, onion, garlic and curry powder in a large glass bowl. Season with salt and pepper. Place the fish in the marinade and mix to combine. Marinate for 30 minutes if you have time.

Preheat the grill element in the oven and line a baking tray with a rack (or foil) and drizzle over a little oil.

Remove the fish and place the fish on the prepared tray, leaving a little space between each cube of fish. Sprinkle over the dukkah.

Grill the fish for 5-8 minutes until beginning to caramelise and the fish is cooked through.

Serve fish with yoghurt, bread, mixed leaves and pickles to make wraps.
