Carrot and Orange Salad

Ingredients

2 carrots, peeled

2 Valencia oranges

1 radicchio, shredded 

¾ cup of crunchy croutons

Dressing

½ tsp ginger, finely minced

1 tsp seeded mustard

2 tbsp of juice Valencia orange juice

5 tbps extra virgin olive oil

1 tsp crème fraiche or sour cream

Salt and pepper

Method

Using a peeler, peel the carrot to form thin, long strips and place in a large bowl.

Segment the oranges and reserve two tablespoons of the juice for the dressing. Add the segments to the bowl with the radicchio and croutons.

For the dressing, whisk all of the dressing ingredients together. Just before serving, drizzle the salad with the dressing and toss well.
