Broccolini Salad

Ingredients

2 bunches of broccolini
¾ cup frozen peas
1 tsp. wakame, rehydrated
1 tsp. sesame seeds
½ bunch mint leaves

dressing
2 tbsp. yoghurt
1 tsp. miso paste
1 tbsp. soy sauce
4 tbsp. rice bran oil
1 tsp. palm sugar
Juice ½ lime

Broccolini Salad

Method

Bring a large pot of water to the boil. Blanch the broccolini and peas for four minutes.

For the dressing place all ingredients into a bowl and whisk until combined.

Assemble the salad by tossing broccolini, peas, wakame, sesame seeds and mint in a large bowl. Drizzle with the dressing just before serving.
