Asian Broth with Veal Dumplings

Adam Swanson continues to amaze with fantastic ideas for cooking with pasta, by using tortellini in an Asian soup!

Ingredients

1 packet 625g San Remo veal tortellini
2 litres of chicken stock
1 star anise
1 fresh ginger, 3 thin slices
1 bunch of coriander, (separate leaves from the stalk)
1 bunch of choy sum, cut into 2cm pieces (asian broccoli)
1 red chilli, sliced in halve
1 tbsp fish sauce
4 tbsp soy sauce
2 tbsp crispy shallots
1 lime, juiced

Method

Heat chicken stock, star anise, ginger, chilli, fish sauce and soy sauce in a pot.

Bring the stock to the boil and then add the pasta and coriander stalks. Cook pasta as per the packet directions for cooking time.

Once pasta is cooked, turn the heat off. Add the lime juice and choy sum.

Divide the soup and pasta amongst 4 bowls.

Finish with coriander leafs and sprinkle of crispy shallots to each bowl.
