60ml olive oil
2 tbsp balsamic vinegar
Pinch caster sugar
Sea salt flakes and freshly ground black pepper
700g ripe cherry tomatoes tomatoes, at room temperature
100g goats cheese
Fresh parsley, basil, dill to serve
Combine the extra virgin olive oil, vinegar and sugar in a jug and season to taste.
Place the tomatoes in a large shallow bowl and drizzle with the dressing. Set aside for 20 minutes to let the flavours develop.
Transfer the tomatoes to a platter.
Crumble over the goats cheese and scatter with some of the herbs.
Drizzle with a little dressing and serve topped with remaining herbs.
