1 cup instant oats
1/2 cup Greek yoghurt
1 small banana
½ punnet each of raspberries, strawberries and blueberries
Handful of macadamias, pistachios, hazelnuts, pumpkin seeds, sesame seeds (toasted, if desired)
2 tbsp honey
Combine half the zest and all the juice of the orange with the oats in a bowl. In a separate bowl, crush half the raspberries with the back of a spoon into a puree, and then add to the oats. Add honey to taste, stir, and leave the mixture to steep for a couple of minutes.
While the oats are soaking, slice the banana and strawberries for the garnish.
Stir in half a cup of Greek yoghurt with the oat mixture, then sprinkle over the nuts and seeds, and finish off with the blueberries, sliced banana, strawberries, and remaining raspberries.
