3 tbsp Extra Virgin Olive Oil
2 heads of broccoli
1 clove of garlic, peeled
1 long red chilli, finely chopped
Zest of 1 lemon, the juice of ¼ lemon
1 small handful of freshly grated parmesan
Salt and pepper
Cut the broccoli vertically into 3 even steaks (large chunks).
Arrange on a lined baking tray and drizzle with 1 tablespoon of olive oil and salt and pepper.
Place into the oven 220°C for 15-20 min or until slightly charred.
Bruise the garlic in a mortar and pestle with a little salt until it becomes a sticky paste. Then grind the anchovies into the garlic. Grate the lemon zest into the mortar and stir into the paste with the pestle. Add the remaining oil.
Once the broccoli is cooked, drizzle over the garlic dressing. Squeeze over lemon juice, and sprinkle chilli and parmesan.
