500g mixed fresh berries (blueberries, raspberries, blackberries and strawberries)
4 egg yolks
100g caster sugar
100 ml Marsala
Zest of 1/2 an orange
1 cup of thickened cream
Whisk the eggs, caster sugar and Marsala until really frothy. Now place the bowl over a pot of simmering water, and whisk vigorously for 15 minutes or until a thick pale custard forms.
Pour a ¼ of a cup of cream in individual gratin dishes and then evenly scatter berries. Pour over the custard and place under a hot grill for 5-10 minutes until golden.
