400g piece of sashimi-grade tuna
1 tbsp sesame seeds, to garnish
2 spring onions, very finely julienned
Prawn crackers, to serve
1 tbsp gochujang (Korean red pepper chilli paste)*
1 tsp honey
1 tsp rice wine vinegar
1 tsp sesame oil
1 tsp soy sauce
*Korean chilli paste can be found in most Asian grocers
Cut the tuna into 1cm cubes and chill until ready to use.
In a bowl whisk the dressing ingredients together. Delicately mix together the tuna and dressing.
Garnish with sesame seeds and spring onions and serve with prawn crackers on the side.
