2 tbs. olive oil
4 potatoes, peeled and cut into cubes
2 chorizo, cut into rounds
1 clove garlic, finely chopped
½ bunch parsley, chopped
1 tsp Smoked Paprika
Salt and pepper
Heat oil in a large sauté pan. Add the potatoes and cook for 10-15 minutes, tossing frequently until they are coloured on all sides. Now add the chorizo and garlic and cook for a further 10 minutes. Season with smoked paprika, salt and pepper. Just before serving scatter with fresh parsley.
This is great served as is or an addition to barbecued meats and fish.
