What is your earliest food memory?
My earliest food memory is watching my mum prepare the dough  and roll out thin phyllo sheets to make spanakopita. She had a little rod for me and I would help. At least that’s what I thought. I would make such a mess with all the flour but it didn’t matter because I was cooking with mum. These are the memories I treasure. 

Which ingredient are you obsessed with right now?
Olive oil. I always have been obsessed with it and always will be. It forms an integral part of my food. I prepare all my food with olive oil and always finish off each dish with a drizzle.

Kitchen tool you can’t live without?
I can’t live without my knife. I have a knife that’s not too big but is always sharp. It carries me through every situation.

Got-to meal when you’re feeling sick?
There’s no doubt that my Chicken Avgolemono soup is my go to when I’m sick. When I was being treated for cancer, my chemotherapy session was always on a Friday and when I would come home mum would always have a big pot ready. It was all I wanted and all I needed.

Entrée or dessert?
My favourite dessert is galaktoboureko. We make it over and over again and I never get tired of it. Layers of phyllo pastry with delicious semolina custard in between. A light syrup is poured over the crunchy pastry.
