5 Minutes With: Alex Xinis

Where did you first learn to cook?
I loved watching cooking shows while I was doing my degree at university, so began as a self taught cook, but first learnt to cook commercially in Brisbane under Jason Peppler at Isis Brasserie. I really took away a lot from my experience under Jason and set a solid foundation for my cooking career.

What is always in your pantry/fridge?
Greek yoghurt and orecchiette pasta.

Go-to easy weeknight meal?
Chilli and tuna pasta with a shredded cos salad.

Favourite meal to cook for a dinner party?
A whole slow roasted rump cap (favourite cut of beef), soft polenta and steamed greens.

Cheese or chocolate?
Cheese – any Brie or Blue.
