Tom Niall started his career as an Aircraft Maintenance Engineer before he discovered his passion for organics while assisting in the establishment of one of Australia's first Organic Wholesale businesses in Melbourne. He coupled this with his family background in the food industry and went on to open The Organic Meat Specialist (T.O.M.S.) at the South Melbourne Market. Tom opened the shop after realising the need for a premium organic butcher shop in Melbourne, that provides top shelf meats and a depth of knowledge of the organic industry. Visiting T.O.M.S. is a truly educational experience and he spends his days liaising with customers in regards to not just education but also preparing and cooking meat. It's the "Home Cook" that he best relates to and too which T.O.M.S's is renowned. Tom procures organic meats direct from Farmers and has wholesaled organic meat to some of Australia's top restaurants and caterers. The shop offers a range of certified organic beef, lamb, chicken and pork in addition to specialty game meats and smallgoods. At T.O.M.S. there is an emphasis placed on informing consumers as to the intricacies of organics, free-range and sustainable farming techniques. Tom actively participates in the industry by conducting butchery masterclasses and through public speaking engagements.
