Anthony Ross is the Director of Food & Beverage at The Langham, Melbourne, a luxurious five-star hotel located in the beautiful Southbank precinct. Chef Anthony joined the hotel in 2001, and was deeply involved in the planning of the hotel’s award-winning Melba restaurant and ARIA Bar & Lounge – the former famed for its decadent buffet offerings, and the latter for its indulgent Afternoon Teas, a Langham signature.

Anthony’s work with Melba saw The Langham, Melbourne lead the way in interactive dining in hotels in Melbourne. Cooking stations and open kitchens meant guests could interact with the chefs creating their culinary feasts (to order). The popular concept has seen the interactive kitchens at Melba expand to include a carvery, sushi kitchen, tandoori kitchen and Asian station.

Anthony’s focus on quality has also made Melba a popular choice in Melbourne. The restaurant recently won the ‘Flavours of the World’ national award at the ‘I ♥ FOOD’ awards, in recognition of its diverse offerings.

One of the highlights of Anthony’s role is coordinating the enviable lineup of nationally and internationally renowned chefs as part of the Langham Melbourne MasterClass at the immensely popular Melbourne Food and Wine Festival. Together with his culinary team, Anthony prepares all the tastings at the MasterClass’ – one of the highlights of the festival.

Anthony has worked at leading luxury hotels around the world including the Le Restaurant de France in Hotel Regal Meridian (1982 – 1987), Gallery Café at Hilton on the Park (1987 – 1991), and the Sheraton Townsville Hotel & Casino (1993 – 1999). Anthony also worked at the Paul Bocuse Restaurant as Premiere Chef e Partie (199 – 1993), earning the restaurant the Best New Restaurant Award (1991) in The Age Good Food Guide. Paul Bocuse Restaurant was awarded Three Chefs Hats by The Age Good Food Guide the following year.

Using his French & Asian training, Australia’s premium local produce, and culinary techniques and skills honed over the years, Anthony continues to develop and create unforgettable dining experiences at The Langham, Melbourne.
